Sri Lankan Stew Curry

Ingredients:

  • 2 tbsp kokopo coconut oil 
  • 1 onion, chopped 
  • 3 garlic cloves, minced 
  • 1 tsp turmeric powder 
  • 1 tsp mustard seeds 
  • 1 sprig curry leaves 
  • 1 green chili, finely chopped 
  • 1 cup pumpkin, diced 
  • 1 cup beans, chopped 
  • 400ml kokopo coconut milk ,,,
  • ½ cup kokopo coconut water (instead of plain water) 
  • 2 tbsp freshly grated coconut 
  • ½ tsp cinnamon powder 
  • Salt to taste 2 tbsp kokopo coconut cream (for finishing) 
  • Fresh coriander (for garnish)

RecipeHeat kokopo coconut oil  in a pot and sauté the chopped onion, garlic, and turmeric until fragrant. Add mustard seeds, curry leaves, and green chili, letting them crackle. Stir in the grated coconut and sauté for a minute. Add the diced pumpkin and beans, coating them with the spices. Pour in kokopo coconut milk and kokopo coconut water , then mix in cinnamon powder and salt. Cover and let it simmer for about 20–25 minutes until the vegetables turn soft and the stew thickens. Stir in kokopo coconut cream for a rich finish. Garnish with toasted coconut flakes and fresh coriander. Serve hot with red rice or coconut roti.
