Ingredients:
- ¾ cup kokopo coconut flour
- 1 tsp baking powder
- A pinch of salt
- ¾ cup kokopo coconut milk
- 2 tbsp kokopo coconut sugar
- 1 tbsp kokopo coconut oil
- ½ tsp cardamom powder
- 1 tsp vanilla extract
- 2 tbsp freshly grated
- kokopo coconut butter (for cooking)
- Sliced bananas & kokopo coconut honey (for serving)
Recipe – In a bowl, mix coconut kokopo coconut flour, baking powder, salt, and cardamom powder. In another bowl, whisk together kokopo coconut milk, kokopo coconut sugar, kokopo coconut oil, and vanilla extract until smooth. Gradually combine the wet and dry ingredients, stirring well to form a thick batter. Fold in freshly grated coconut for extra texture and flavor. Heat a non-stick pan and grease it with kokopo coconut butter . Pour a small ladleful of batter and spread gently. Cook each pancake for about 2 minutes on one side, then flip and cook for another minute until golden brown. Stack the pancakes and serve warm with sliced bananas and a drizzle of kokopo coconut honey
